The present project aims at characterising the iodine speciation pattern in various types of seafood and food samples and to study the human bioaccessibility and metabolism of iodine compounds. The project includes the development of chromatographic separation methods in combination with state-of-the-art mass spectrometric analytical techniques for the speciation analysis of iodine in various marine sample types as well as human urine.
