Arsenic speciation in foodstuffs and water in relation to legislative requirements

The course combines lectures giving a broad as well as a specific introduction to arsenic speciation with hands-on practice in the laboratory using HPLC-ICP-MS. The course emphasises the participants’s critical evaluation of all stages of the speciation procedure, and will discuss how to trace sources of error leading to poor accuracy.

1st day (9.00-17.00 hrs):

  • Welcome, presentation and introduction to the course
  • Why carry out speciation analyses in the food area? (lecture)
  • A comprehensive introduction to sample preparation for arsenic speciation analysis (lecture)
  • Lunch break
  • Laboratory practice I. Sample pre-treatment and extraction

2nd day (9.00-17.00 hrs):

  • A comprehensive introduction to arsenic speciation using HPLC separations with ICP-MS detection  (lecture)
  • Qualitative and quantitative analysis, calibration, precision, accuracy (lecture)
  • Lunch break
  • Laboratory practice II. Analysis of samples by cation exchange and by anion exchange HPLC-ICP-MS
  • Data analysis. Comparison of results obtained from the two  chromatographies (teacher-student interaction)
  • Summary and final discussions
